Mint and tarragon are both good in salads. You can have mint with strawberries in yogurt or ice cream. You can also add mint to pita wraps with either falafel or grilled lamb plus some lettuce, onions and yogurt. Tarragon is good with fish, and really great with roasted peaches or apricots (also over ice cream or yogurt).
I've also got a recipe for tarragon and black pepper hot cocoa.
If you'd like, come a bit later in the spring (when the plants are starting to really grow, and my ankle hurts a bit less) we can make a really good soil mix and put in some basil and peppers.
Repotting the maples should be done soon, before the leaf out.
