I am trying to make some dietary changes and eat more protein earlier in the day. I'd like to start eating eggs, which I prefer scrambled. I love the eggs you get made to order at breakfast buffets at hotels. You know what I mean: they're scrambled, but light, fluffy and moist. I think they mix in milk before cooking them

The secret is to whip as much air as you can into the eggs to get the fluffy ones, moist comes from cooking them until they are "just under" set. They'll continue to cook for a minute or so after you pull them off the heat.
That's what I do, anyway.
