I am trying to make some dietary changes and eat more protein earlier in the day. I'd like to start eating eggs, which I prefer scrambled. I love the eggs you get made to order at breakfast buffets at hotels. You know what I mean: they're scrambled, but light, fluffy and moist. Hello. :) Yes, I use a bit of milk in my scrambled eggs. Also, I beat the eggs in a bowl (at which time I add the milk, salt & pepper) before pouring them into the frying pan. I think that beating them with a whisk lets more air into them. But then what the heck do I know? It works for me.

And now I'm hungry for scrambled eggs. :)

What she said but also use low heat. It's going to take a while but they come out much better than using high heat.

Try one whole egg and one egg white. Scramble and cook, moving the around as much as you can while cooking.

The secret is to whip as much air as you can into the eggs to get the fluffy ones, moist comes from cooking them until they are "just under" set. They'll continue to cook for a minute or so after you pull them off the heat.

That's what I do, anyway.
