Here is a wonderfully comprehensive, spoilertastic, and awesome place to real ALL about Edward Elric. [ Personality ] :
Watch out kiddies. This guy's a doozie.
Edward's really your typical 16 year old. Nothing unique about him. Oh. Except for the fact that he's considered a prodigy with the art of Alchemy. Oh! And the youngest boy ever to enter Amestris' military at just 12 years old, achieving the title of State Alchemist. And let us not forget the left leg he lost during the attempt at human transmutation that ultimately backfired, taking his limb and his little brother's entire body, which he gave his right arm to regain his soul and attach it to a suit of armor and are currently replaced with metal mechanical limbs.
Yeah. He's totally normal.
Not.
But that? That doesn't begin to touch the tip of the iceberg with this boy.
The first thing to realize about Edward is that he's a child living in an adult's world. Having been robbed of a real 'childhood' when their mother passed away, both Edward and Alphonse had to start making adult decisions. Be it the commitment to attempt the taboo human transmutation, the decision to get Auto-mail (a very painful surgical process for those shiny metal limbs), or even join up with the military at just 12. Both Elric brothers have been through more hell than most people see in their entire lives. And yeah. The younger Elric? He handled that a lot better. C:
Edward, though very advanced mentally, acts his own age. Probably even a little younger than his own age. The boy's extremely bold nature, no bull-shit attitude, and and general strong will get him into gobs of trouble. Consider, for example, first meeting Paminya, who stole Ed's silver alchemist pocketwatch issued from the state. What's this twerp's solution? HUNT HER DOWN AND BEAT THE CRAP OUT OF HER.
Needless to say, the little bugger's a little vindictive. And... very violent.
He's also pretty damn callous. Ed is shown for having a true disdain for things like religion. My guess? God never showed them much mercy. And even to those that practice those ideals, Edward becomes rather callous, calling out their behavior. This just shows that he's a blunt individual and isn't afraid to tell you what's really going on. Call it his pride, which he has quite a bit of, call it mean. It'll be brushed off strong shoulders.
Edward can be very prideful of his intelligence--especially with alchemy. Most of the time, his creations are overly ornate, usually decked out in some kind of Gothic style, and a plain eyesore. But they definitely get the job done. As stated before. Ed's a prodigy. He, because of the human transmutation, has seen what Alchemists call 'The Truth.' What is that? Well. It's everything. One additional gift--or repercussion, that's up for discussion--the Truth gives is the ability to create an Alchemy circle with one's own body.
Ed's known to be quite a skilled fighter, having trained under one of the most talked about martial artists ever. His combative ability puts him on par with alchemically created beings called Homunculus, who each have some kind of finely honed skill. Oh. And Alphonse. They usually end their fights in atie in some way. It should also be noted that Ed doesn't like to sit still. He's a bit of a busy body.
That's not all though, kiddos. Edward has a much more saint-like side.
The more logical side of him is much more calm and much easier to deal with. Edward's real love? It's Alchemy. Both of these quick-witted brothers can spend hours upon hours in libraries without even realizing it, researching anything they can related to Alchemy. And they have a damn good reason for it. Having lost parts of their bodies, the brothers both promised to not stop walking until they had been returned to their original bodies. Ed's love of the sciences makes him highly over-critical and overly-logical. So much so, he sometimes misses the smaller details. It's a good thing Alphonse is there to back him up.
Another thing to note about Edward is his 'Faith' so to speak. As previously mentioned, Ed is not religious, nor does he believe in a god. His faith lies with his science, and Alchemy's first principle. Equivalent Exchange. One cannot gain anything without first giving something in return. Edward follows this principle very closely. And reasonably so. They've always had this law to fall back on. It's a comfort zone for Edward, and it's what works for him.
Though it does notably make him rather stubborn and brash, and sometimes, even blatantly disregards military orders to uphold that natural law.
Ed, though he's immature and can come off like he doesn't care, is one of the most if not THE most compassionate state alchemist there is. He became known early on as a fighter for the people. In general, every corruption he finds, he tried his damnedest to set things right. He shows an almost altruistic behavior in several situations. Or... maybe he just wanted to show off. It's a tough call with this Elric.
To the people he considers close? You can have no better friend or ally. Ed would give the shirt off his back to help someone close to him, and is quite loyal to boot. To the people he's closest to, he'll do everything in his power to keep those people safe and not have to worry about him--though this backfires more often than not.
One of the last things I'll go over is Ed's view on his two closest people: Alphonse and Winry.
Alphonse is extremely important to Ed. I believe Ed feels an almost overwhelming guilt for pushing his younger brother to attempt human transmutation to bring back their mother. Ultimately, Alphonse lost much more than Edward did during the whole ordeal. Alphonse is his top priority and restoring his body to its original state. He shows a disregard for the prices he paid--his arm and leg--though Alphonse consistently tells him that restoring Ed's limbs comes first. Though they have this immensely close bond, the two of them are constantly bickering, just adding to the child-like behaviors in this adult world.
Winry is someone very close to both brothers. It was Winry who designed Edward's automail, and gave him the opportunity to stand and walk again. Though canonly, it is shown that Edward and Winry end up together, it is important to note that this is well after Edward had 'put things back to normal' so to speak. With Al in his rightful body and his right arm restored, Ed confesses. So though he holds a thing for Winry, it will not be revealed until after Al gets his body.
OH. AND ONE MORE THING.
Don't you ever, ever under any circumstances refer to Edward Elric's height as less that what it should be. This is included, but not limited to, shorty, shrimp, midget, bean, twerp, small fry, how's the weather down there, resoundingly wee stature, molecule, microscopic, shorty mcshortshort, or, especially, pipsqueak.

It's theorized that Edward's eating and sleeping habits are directly connected to Alphonse's body, which is kind of... hanging out between the Gates. The theory is that they sustained the body long enough for Edward to get it back. This might explain why he eats and sleeps so much, yet gains... no height.

[Oh man, what happened...? Golden eyes opened slowly, staring up at the sky which... wasn't really the sky. He felt the wet clothing stick to his body, smelled the sea-smell in the air... Something wasn't right?
... Saltwater?
Oh HELL no! He will NOT let himself rust.
The boy was on his feet a couple seconds later and removed a very familiar red coat. Man, it was soaked... Everything he had was just soaked. Removal of the second overshirt showed off his gleaming metal arm.]
Aww man, Winry's gonna kill me if I let this thing rust...
[Hm. Well. If y'can't find a towel, make one! Man, did he love Alchemy. A simple clap of his hands brought forth a familiar blue light. He placed his hands on the red coat on the ground. Slowly, the water and salt began separating, forming distinct piles on the ground. Hey, it was just altering some elements here and there. Separating? No problem. And finally, he was left with a mostly dry coat, which he promptly began using to dry off his automail arm.]
Hey Al, y'need some rust prevention?
[He tossed the towel back behind him with a smirk. His poor big, klunky bro... Who... did not respond.]
... Al?
[Nope.]
HEY. AL. Where'd you go? [... Okay, now he was staring to get worried. Displace him? Fine. But take away his brother? He'll worry.]
