Somen noodles are thin, Japanese noodles, usually served chilled with a dipping sauce. It's a nice, refreshing light meal on a hot, muggy day -- plus, it's quick and easy to make. :)
I know there's low sodium soy sauce - it's usually sold right next to the regular soy sauce, so it shouldn't be too hard to find. Maybe you could add another tablespoon of oil? Unlike Italian pasta, salt is not added to the water when boiling Japanese noodles, so that should cut down a bit on the sodium... maybe increase the amount of the vegetables, use less ham and crab/kamaboko/uzumaki... well, do experiment and good luck! :)
