this goes on my list of things to definitely try. i've never actually made fried chicken, but that's because i'm generally wary of anything that requires me lugging out and then disposing of THAT much oil. do you reuse the oil or just drain it off or something else?
I reuse the oil. I strain it to get rid of all the little bits and put it in a closed container. If the first use is for say, tortilla chips, then I can get a lot more uses out of one batch of oil. When it's chicken, I only like to use it twice more at the most.
