I haven't used Outlook in forever, but I remember using the Rules Wizard to sort incoming mail, and it certainly looks like you can apply similar rules to mail you send out. This may not be an ideal solution as I assume you can't just explicitly list recipients for each folder rule, but at least it might be a start.
Unfortunately, it doesn't look like Outlook's Conversation view works like Gmail's: it won't put in your own replies, although it does indicate when you have replied to or forwarded a message in the thread.
Good comments. So far they don't (seem to) cover "new-topic" emails, though. For example, if I start a new thread of emails related to a certain project, I'd like them to go a folder for that type & name of project. I guess this could just be an advanced rule, perhaps?
