It's been a while since I posted. Work has been busy. Nothing too much new going on. I finally got my personal laptop fixed. I was having problems with the battery not charging and the power cutting in and out. I bought a new power adapter, but that didn't help. It turns out it needed a new power jack. Hey Scott--our weather here has been a bit crazed. It snowed in the mountains and some of my plants took a setback. I'm still plowing ahead and looking at tomato plants tomorrow even if I have to keep them inside for a bit! I'm jealous about your comfort food! I think I'm just going to pop a Sunflower Farmers Market pizza in the over since I'm pretty sure my date flaked on me. Other than that, I wish you both a great weekend! It's been fun catching up with you both this week.

We've had snow, rain, slush, sleet and ice all in the last 24 hours. It's definitely not planting weather, but it *is* good comfort food weather. Last night was the turkey pot pie, stuffing and chocolate chip brownies. Tonight is chicken and rice casserole with mushrooms, mixed berry cobbler and good belgian beer.

Glad to hear you're better, I was worrying about you a bit. Homemade Turkey Pot Pie? How does one do that in a short time. Hell you guys eat better than we do and there's four of us.

Well, I don't know if an hour or so is considered short time, but here is what I did. Buy a bag of frozen peas and carrots, some pre-cooked chicken chunks (canned or in the deli section), and some refrigerated pie crusts (the pillsbury rolled up kind).

Microwave the peas and carrots till tender and let the pie crusts warm up a bit(directions on the package). Meanwhile make a gravy of 4T butter or margarine, 3C flour, 3C milk and some chicken bouillon cubes. Cook butter and flour together, add milk, bouillon and salt and pepper and cook till thickened. Mix chicken, gravy and peas and carrots together in a bowl. Line deep dish pie plate with bottom crust, add filling. Put top crust over the filling and seal the edges. cut a few slits for steam to escape and bake at 350 for 45 minutes. Serve with stove top stuffing or mashed potatoes.

Correction. It should be 3T of flour, not 3 C!
