Your house sounds (and smells) exactly like mine! So glad to hear you're utilizing the bounty of free apples and making wonderful, homemade treats for friends and family to enjoy. Our apple tree in Colorado is also overflowing, and I've made many batches of apple butter and applesauce of varying flavors. So satisfying and such an accomplishment! I've also made jams of blueberries, apricots (wild-picked), strawberries, and will do peaches soon. My Mom was my inspiration, when she took me up to the nearby highway as a girl to help her pick elderberries and make jelly and wine from the harvest.

There's nothing that tastes like homemade. I've noticed an unusually large apple harvest this year. Bonus for me! I've been here only a couple years, and the last few years I made a few crumbles and shared some apples with the neighbors but this year I had a ridiculous amount of fruit. One of these days I'm gonna learn how to can.

I actually water bath can all my jars of jam and apple butter. Since I'm at 6,000-plus feet of altitude, I boil them for 6-10 minutes per batch, depending on the size of the jar. It's so satisfying to hear the "click" of the lids sealing up as they cool down, and then they last for a year or more on the shelf.
