If you are interested in that sort of thing, most all of the existing seaworthy tallships that make berth in North American ports offer "schooling-at-sea" opportunities, some of which are not tied to specifically-undergraduate programs. Search around for the homepages of tallships and investigate what other options are out there. You might try starting by asking in tallshipgeeks, or the Sail Training International message board:
