My neighbors own Place Pigalle in the Pike Place Market. It's much smaller than the places you mentioned, and I have no idea if they have open positions, but I'm fairly certain they would show up for a scheduled interview :-)

i am the branding designer for a new place opening last week of august.
its mid range, not upper, however, i can say that Jefe, the owner and chef rocks some serious ass and he is super cool. he would be fun to work for.

Austin Cantina is on 24th in ballard...just up the street from old library and next to Wingmasters.

It's gonna be a real nice place i think!
and he is hiring for everything now.

another option is the catering gigs at woodland park zoo.
my friend is the manager/bar tender there and may still be looking for staff.
he is really awesome at what he does and they get some amazing tippers there. ;)
