I'm looking for easy to medium difficulty recipes from meals that contain no pork, no gelatin, no enzymes or anything else that might contain pork products.
I'm cooking for someone I know, and they have certain limitations on food they are suppose to eat.
Anything spicy is good too they like spicy food. =-)

1 tablespoon olive oil
3 cubed chicken breasts
2 cans of salsa of your choice
1 red onion diced
1 Green Bell pepper diced
3 cloves of garlic minced
salt/pepper to taste
1 teaspoon chile powder
spice to your prefrence
In a skillet over hight heat,add the olive oil. saute the onion, pepper, garlic until soft and translucent. Add the diced chicken and seasonings and cook for 8-10 min on high heat. Add the salsa and continue cooking for another 10-15 min.
serve over spanish rice or lettuce, top with shredded cheese or sour cream.
enjoy, you can make it as mild or spicy as you want..
