you can automate certain commands in photoshop.

for example, you can do:
open
desaturate
save
close

it's been a while since i've don it, but there's a way you can save a series of commands and then do playboack on whole folders of images. i'll look at it later today, remember how, and get back to you.

you can make an action and apply it to entire directories, or open files. etc
