That was really ballsy by him. He has to assume that when you bet that strong, you've got at least a 5 (with a better kicker than his 7) or a better pocket pair, and probably a King. He was setting himself up to get all his chips taken. With you leading out, he shouldn't have raised unless he was confident that you were bluffing.
On the flipside, calling his All-In seems to not be the best play here. In your shoes I'd assume he has the King if he's willing to go all-in at 4x your bet and 2x the pot, knowing that he called a strong preflop bet of yours he likely has a King in his range of hands he'd be raising all-in here with.
