i haven't scoured bakeries, but i've never found a whole wheat baguette. La Brea makes a real whole wheat artisanal loaf, i guess you might call it, but only one variation. the other wheat breads are fake. many whole wheat breads are fake or use half refined, half wheat to retain the same texture of white bread. do you know of anyone who sells a whole wheat baguette?
hmm..have you tried red hen? or pastoral? they have a lot of breads there. You should also try some polish markets or some german/austrian bakeries. I know they all make really dense wheat or rye breads though i don't really know whether they are 100% but i feel the heaviness suggests that it is. also the taste is not as mild as regular wheat or wheat/white bread but I really like it. have you tried baking bread? that might be the way to go!
