Looks very interesting... What kind of tofu do you use? The silken kind? The spinach is fresh or the frozen type?

BTW I have 2 bottles of stuff to pass to you to try. Raspberry vinegar and passionfruit vinegar. :P

It has to be firm tofu.. So I use something called pressed tofu, but instead of blending it like the recipe called for, I just squished it with my hands so that the mixture retains more body.
