I came home this afternoon with a few ripe, slightly sad-looking (hence free!), but very delicious field tomatoes. So I slow roasted them: cut in halves and quarters, drizzled in olive oil and sprinkled with salt, put on a baking sheet, and sent into the oven at 200F for 3.5 hours. Yay Wikipedia for enlightening me. Yes in that it was super thin, no in that I did have yeast in the dough still, and it certainly rose a bit where I didn't cover it with tomatoes. I didn't have the Provel processed cheese stuff. But it was cut into rectangles!
