So in our kitchen, which sometimes becomes the Kate and Dave school of Mad Science, we had an amazing breakthrough in Baconology. We realized immediately that we could not keep our discovery to ourselves - NO! We had to share it with all our friends, so that more people could share in this experience. My mum makes a nifty marinade for pork chops with peanut butter and barbecue sauce. It works.

Oh yes. Peanut Butter. A friend of mine from Maine tells me it is not uncommon in those parts (to pair peanut butter with bacon). It is lovely even just on its own with the bacon - the marmalade just heightens the experience.

We experimented with just peanut butter, but found the marmalade added a wonderful new dimension.

The ideal version would probably be to coat the bacon strips with the peanut butter and marmalade, and then roll them up into sushi-like rolls. Around the house we've started referring to it as the "Baltimore Bacon Roll." I'm going to make up a batch to bring to my family's Easter gathering and see how it goes over.
