The grocery store by our place just got in some duck eggs--DUCK*! I thought that was seriously excellent and now I'm munching a hard-boiled one. The yolk is higher in fat and the white higher in protein than chicken eggs, so that affects the texture....super creamy yolk, bit more rubbery white. Taste is basically egg taste. Oh my gosh. Do you think they'll be as good as the Samurai Noodle eggs? Because those are absurdly tasty.

I hope so. The recipes that I find are pretty Chinese-flavored; I'll have to poke around for a Japanese one.

Haha, perfect timing. I've been thinking about eggs a lot, as the food biochem class I TA just finished up on the egg unit.

In other news, once I saw emu eggs at Whole Foods. I wanted to get one, but they were super expensive. The end.
