Yo, an update!

Hello everyone! I haven't been on since the other day which was the worst day of my life. Life hasn't gotten any easier but one can only perceiver. Please send your prayers and thoughts to my Lead Person from work, who is in the hospital due to a stroke. I miss your loud mouth and bitching, please hurry and get better so you can come back! T^T

On a lighter note, I've been trying my hand on a recipe! It's for Shrimp Fried Rice, which I got it out of a cooking book. The instructions seemed simple enough, so I gave it a try.

First mistake: I forgot to buy the mixed vegetables I needed to add and only realized when I was to that point in the intructions.

Second mistake: The skillet was much too small for it since it was 4 servings and it was practically spilling over the sides and thus didn't cook right in my opinion.

Third mistake: I didn't wait the five minutes after cooking the rice so the excess water could evaporate (or is it absorbed into the rice? lmao)

So, all and all; it was a disaster. My mom said it tasted alright but you know, she's my mom and has to be nice XD

So, today I decided to once again try to make it since I already knew what I had done wrong and I was slightly more familiar with the process (not enough to drop the instructions, but maybe that will come with time).

Things I made sure I had:
-The bag of mixed vegetables (I remembered this time! =D)
-Large skillet to hold it all together (it cost me $25 T.T)
-rice cooked slightly ahead of time (it came out really good! <3)
-mp3 player blasting my favorite music (addicted to The Invisible Wall and Defective Tragedy right now)

The second time around it came out very good, even I ate a whole plate full (unlike the first time when it was a tad...unedible rofl). So, I'm happy and motivated to try more interesting dishes. Next on my list (because my brother demanded I learn it roflmao), is Lo Mein Shrimp (can be substituted with Beef, Chicken or Pork, but the third choice isn't even an option because I don't eat anything that comes from a pig)

If anyone wishes to try out the recipe, then I'll provide it. Sorry I don't remember the name of the book, but all credit goes to them and the publishers XD

Shrimp Fried Rice

2(3.4 oz/1 cup) bags of quick-cooking long grain rice
3 TBSP canola oil, divided
2 Large eggs; slightly beaten
1 TSP jarred minced garlic (should be slightly mushy, not the dry kind)
1/4 TSP crushed red pepper (more can be added for spicier rice)
1 LBS peeled and deveined frozen row shrimp; thawed (there are bags of shrimp already peeled and deveined for easier preperation)
1 1/2 frozen mixed vegetables; thawed
3 TBS soy sauce

Cook rice according to package directions, set aside.
Meanwhile place 1 TBS of oil in skillet over medium high heat and then add eggs; cook 1 to 2 minutes stirring frequently until scrambled, remove from heat and set aside(it'd be best to use a smaller separate skillet for this).
Heat remained 2 TBS of oil in skillet, add garlic (watch out, it sizzles immediately!), crushed red pepper, and shrimp. Cook 2 minutes or until shrimp turn pink (If you're using already cooked, packaged shrimp, then just cook until you're satisfied its ready but don't overdo it!).
Add vegetables and cook until thoroughly heated. Stir in rice, eggs, and soy sauce, cook one minute or until thoroughtly heated (you can cover it but stir occasionaly so it doesn't burn).

If you're not sure about cooking the rice, or have it stored in a container jar (like we do) and don't have the instructions; here are instructions on how to cook the rice.

Place sauce pan over medium heat, add 2 cups of water and bring to a boil, add 1 cup of rice and 1 TBS of butter/margarine. Cover and cook for 15 minutes, shut off heat and let stand for 5 minutes.

You can stir in the butter but afterwards, it's best not to stir it cause it will stick or probably become soggy...not too sure lmao Well, that's about it! Hope some of you try this recipe and give me feedback on you successes, blunders and overall taste. Next recipe, Lo Mein Shrimp/Chicken/Beef! Ciao babies!
