Okay, so there were a lot of changes done to the Southwest Tuna Melt. Mainly, they turned from regular sandwiches to mini ones. So, there were a lot of mistakes but it didn’t really turn out that bad.
First mistake: I completely forgot that we didn’t have regular bread, only small buns that are kinda like those cool small bread-rolls that are baked during Thanksgiving.
Second mistake: I forgot to buy the tuna! @.@; okay, so I was saved because I had some there, however, they were two small ones that only equaled 10oz and the recipe asked for 12oz
Third mistake: Bought green peppers instead of red (well, this one was intentional, since I remembered that it’d be too spicy and not only can I not stand spicy things, but it wouldn’t be a good combination with mom’s stomach ulcer ><)
So, because I messed up I had to improvise a lot! XD
Original recipe:
1 12oz can solid, white albacore tuna, packed in water, drained and flaked apart
1/3 cup finely chopped sweet Vidalia onion
1 medium red bell pepper, finely chopped
1/2 finely chopped cilantro
2/3 cup mayonnaise or to taste
6 slices pepper jack cheese
6 slices of whole grain bread
Mix together tuna and mayonnaise. Toast slices of bread. Spoon tuna mixture onto toasted bread and top with cheese. Broil until golden brown and bubbly. (dude, this one doesn’t even mention where the onion, peppers or cilantro are supposed to be added XD)
Edited Recipe:
2 5oz cans of light tuna, packed in water, drained and flaked apart
1/4 cup finely chopped sweet Vidalia onion
1/2 medium green bell pepper, finely chopped
1/4 finely chopped cilantro (really, it was a handful...so maybe less than this lol)
2 TBS mayonnaise
3 slices pepper jack cheese, cut in half
6 small bread rolls, cut in half
Add 2 TBS olive oil to pan; heat. Mix tuna and mayonnaise together. Add onion, bell pepper and cilantro to oil and cook until thoroughly heated, add tuna mixture and cook until tuna is a golden brown then set aside (this is my own way of making tuna, and while I usually add lemon, I left that part out this time lmao). Meanwhile, lather bread rolls with a small amount of butter and set that side down to toast (I couldn’t toast them in the toaster because of their oval/rectangle? shape, so I had to use that flat surface pan...er, the one you can use to cook pancakes...whatever it’s called! XD rofl). When finished toasting, turn over and spoon tuna on top of it and lay the cheese over, cover with the other side and broil until cheese melts and bread is toasted. Remove from heat and serve!
And that is how I created, Mini Southwest Tuna Melts! They were yummy, actually! ^^; Not bad for all the mistakes I did (intentional and otherwise). So, that’s all for tonight. New recipe created by yours truly,
