There wasn't an explanation on my calendar.

My opinion is that "I love you, too" is what the real script, and George Lucas, intended Han to say. Harrison Ford probably wanted to change it so that it would fit his character.

A shooting script is the final draft of the script going into actual production of the movie. It is what the movie should actually be. This isn't always true however, especially on comedies because of improv and the like. Probably what happened was Harrison was probably messing around during a take and said "I know." And that fits more into his character than "I love you, too." So they probably went with that. The only problem with something like this is it has to go through the writer and the writer has to approve it, but in this case Lucas was the writer so it didn't matter since he also directed.
