I cut my hair short. I am making meatloaf tonight for dinner. Dave says I'm a grownup now.

Amanda just took her last final for the semester, so now she has a month off school, but we can't afford to drive up to Fort Worth right now, so I think you guys are gonna need to come visit us down here. There's nothing to shoot at, but we have cupcakes!

Yay for Amanda! I have some gifts for Amanda that I wrapped in Chistmas paper. So that's totally worth a drive, right?

We should totally come during the holidays! I have two weeks off from work. Ummmm.... We are also going to Austin on the 10th of January. Let me figure some stuff out & I'll call you guys!

Awesome! We have plans on Christmas day, obviously, but otherwise, yes. Weekdays are easier than weekends, but whatever works for you.

for the meatloaf, did you soak the breadcrumbs in milk? that makes it rule!

nope. i used the store bought ones. do you have an awesome homemade recipe? do you mind sharing? my mom never made meatloaf & i don't have a tried&true recipe.

i have an aawesome recipe!

here goes:
1 cup breadcrumbs (fresh)- i grind fresh bread in a spice grinder
1/3 cup milk
1 tsp salt
2 tsp pepper
2/3 lb. ground pork (not too lean)
1 lb. ground chuck
12 oz. pasta sauce (the good stuff)
2 eggs
1/3 cup parsely finely chopped

preheat oven 350. soak breadcrumbs in milk. beat eggs with a fork. add meat, eggs, 4 oz. pasta sauce, salt, pepper and parsley. mix thoroughly and pack into a 9x5 bowl.

bake 1 hour and drain top with 4 oz. remaining pasta sauce. return to oven about 10-12 minutes. let stand about 10 minutes. serve with remaining sauce on the side.

it's so awesome. and goes great with spinach feta cous cous!
