I've got my first dish that I rate one star -- and that's only because it's within the bounds of what might be considered "edible." Bruce gives it three stars, but he's being generous. Hey Sharon! I've been meaning to share a recipe with you and figured I'd just comment on here. A friend of mine is nursing right now and her daughter is allergic to eggs so my friend has been using a lot of vegan recipes for sweets. Anyway, she made these red velvet cupcakes and they were TO DIE FOR. I immediately thought of you and then forgot until I just read this post about cookies. Thought you might like an alternative to the yucky cookies. Here it is...

Mix together well in a bowl: 2 cups flour, 2 cups sugar, 6 Tbsp cocoa, 2 tsp baking powder, and 1/2 tsp salt. Set aside. Blend in blender until smooth: 1 can (14 oz) sliced beets, 2 tsp vanilla, 2/3 cup canola oil (that's the only part I'm not sure about if it will work for you!), 4 Tbsp lemon juice. Mix together wet and dry ingredients. Bake @ 350 for 18-22 minutes. Makes 24 cupcakes or 2 9-inch round cakes.
