The famous After the End - who hasn't read it? Well, if you haven't, you really must! It was written pre-OotP, so it's A/U by now, but it's still a wonderful look at what the world would be like post-Voldemort. The plot is fantastic, characterisation spot-on, the romance really satisfying.
I've got the whole thing, all forty-three chapters, plus prologue and epilogue printed, that's how good it is!
