I find that it binds the mixture together ever so slightly more but doesn't do anything significant to the taste.
I called this my ravioli lasagna since my family's raviolis are made with a similar stuffing. The raviolis use more egg - raw mixed in to bind it and boiled egg that's crumbled into the mixture. Those also include another ground meat like chicken and/or pork and/or lamb. I also mixed in a bit of garlic into the lasagna where I do not do so with the ravioli.

I just pciekd out some new recipes to play with for Thaksgiving. I'm looking forward to cooking and feeding a bunch of people =)
