One of the things I meant to recently post about is the bit of cooking I did last Sunday. I had picked up some wine the week before and done some grocery shopping on Saturday. I decided to make a big pot of sauce and some lasagna ( Read more... )

mm sounds like my mom's lasagna! Haven't had it with spinach yet, but I can imagine that making it really good. :)

I have never had lasagna with egg in it (to my knowledge), but that sounds like a swell idea...

I find that it binds the mixture together ever so slightly more but doesn't do anything significant to the taste.

I called this my ravioli lasagna since my family's raviolis are made with a similar stuffing. The raviolis use more egg - raw mixed in to bind it and boiled egg that's crumbled into the mixture. Those also include another ground meat like chicken and/or pork and/or lamb. I also mixed in a bit of garlic into the lasagna where I do not do so with the ravioli.

Well, a binding agent can't hurt - loads of molten ricotta can be messy.
