Hi! I'm a 25-year old aspiring pastry chef-to-be. (I start pastry school at Seattle Culinary Academy on April 1st). I found your journal via cake_decorating and I'm always looking to friend fellow bakers and pastry artists. Add me, please? :)
I'm going to bake Roman's birthday cake this year and I had a question, and I remembered you would be a good person to ask :) I'm going to attempt a racecar track cake which will require some intensive (for me!) icing/decorating/creativity. How far in advance can I start icing the cake? I know I can freeze the actual cake, but how long will a cake w/ icing last in the fridge? I REALLY don't want be to spending hours the night before the party (this Saturday) stressing over this cake! Thanks :)
You can frost the cake and store it in the fridge about 3-4 days before the party. Just make sure you keep it covered of in a cake box to be sure it stays mosit and protected. Then the day of the party take it out a few hours before serving so it can come to room temp. Hope this helps! If you have any other questions feel free to ask :-)
