The amazing shop over the road from us sells, amongst other delights (OH SO MANY PICKLES - I LOVE PICKLES!), dried aubergine. What can I do with this? I really want to buy some but I have no idea how to cook with it.
My instinct would be to rehydrate it with tomato juice, although after that I don't know :-) Maybe fry it in olive oil and use it in a salad with some basil?
