They remove the headers & useful cut-tag info from posts;
They make it so logged-in people who gave LJ a birthday too young can't see the posts (14 for adult concepts, 18 for explicit content)
They make it so logged-out people and those who never gave LJ a birthday have to click past a "are you old enough for this" filter.
To not see them when you're logged in, you can go to your manage settings page, and down at the bottom are the "Adult Content" settings. You can set your journal to "No Adult Content" (which, in my mind, means "nothing it's illegal for a child to read"--which is all text in the US), and set "Do Not Collapse" and "Do Not Filter" so that other people's posts aren't hidden behind the annoying cut tags.
