What she said. I was amazed to find out how far in advance a lot of places get filled, especially in the summer.
Check on state laws for clergy - Massachusetts allows you designate someone you choose to be a Justice of the Peace just for your wedding ceremony. I don't know how common that is, but if Oregon has something similar you can designate anyone you wish to perform the ceremony as long as you take care of all the paperwork beforehand, and that's a lovely thing, because then the person who performs it can be someone you both really feel connected to, etc.
Save the date cards one year before sounds good, then reminder emails at some point, then actual invitations. Got to remind people or they forget, not many plan one year out. ;)
I had a 350 people wedding for 2k. What we did was make a list of who we were going to invite. Then we went looking for a place to have the wedding at. Once we did that, we picked pretty much everything else out.
The save the date cards I wouldnt bother with so much. We picked out our invitations (you can actually do it yourself if you have a good printer and some fancy paper) and had RSVP cards. We sent ours out a few months in advance for those who have to request time from work etc. Feel free to email me with questions. I figure if I did it once, I can at least offer suggestions. And remember, its you and Ry's day, so do what you all want.
