Marshmallows!

I made marshmallows!

They aren't done yet, but the pre-chilled stuff was good. Tasted like marshmallow fluff. I used this recipe. The egg whites really do make it fluffier. I think there's a bit too much vanilla though. Making marshmallow is awesome fun - I agree that it's easy to overdo the vanilla, though. (I had that paste stuff, with the vanilla bean seeds, and it was too, too strong.)

The vanilla turned out to be okay after the marshmallows had set, and the marshmallows went over well with the family. Too melty for roasting for more than a few seconds, but excellent in hot chocolate.

I've never cooked with vanilla paste or seeds *adds to list of things to try*.
