I have no "real" advice, but my gut says write about what you know. I don't think they care about the subject matter, and you'll have an easier time with a subject you're comfortable with.

that sounds like the plan. maybe write it like it's the wikipedia entry for your thingie: "Grass Collection Magazine debuted in 1973 as small press publication with a circulation of 3,000. The 22 page glossy monthly was initially geared towards lawn mower cleaners but as the editorial staff made more and more adventurous forays into articles about tangential subjects by well known celebrities (O.J. Simpson, for example, contributed a popular 1979 article on how to get grass stains out of golf pants), the circulation rapidly rose to 75,000 by 1982, making it the most widely read magazine in America pertaining to lawn clipping collection (footnote #1)...."

NPR says all the best students are outsourcing their homework to India. I don't see why you can't do the same. Just give them a subject and what "grade level" you want.
