Here's the basics:

>lj-cut< then past the quiz HTML, then >/lj-cut<

If you want the link you create to say something other than "Read more" start it with >lj-cut text="your words here"<

Be sure to flip the < > things around. I flipped them here so they didn't automatically make links.
