Sour cream is very good in chocoate cake recipes - it keeps it moist and gives it tang!

Skip the mayo recipes :D

Would it taste weird?

They sell buttermilk here over the X'mas holidays. Otherwise I usually use milk so now I can use buttermilk. Would it taste weird with the sour cream?

I'd do either/or - together, it might be too much "tang."

Enjoy them for me - with the diabetes diagnosis, cupcakes are off my list! That said, I'm able to eat SO MUCH else now, finally, that I'm not mourning them too hard :D

My mom had a recipe for a Chocolate Mayonaise cake, it rocked. !!! Very tasty. Should be good for cupcakes.

Wouldn't mayonnaise taste strange?

No, it just makes it taste good, but you can't taste mayonaise. Light and airy. It's just delish.

http://www.joyofbaking.com/RedVelvetCake.html This recipe makes good cupcakes, they were a little 'flat' on top, but extremely moist.

My second favorite recipe is more of a gooey chocolate muffin though :)
