I made this vegan mac & cheese recently, and it was awesome. I skipped the cayenne just because I don't do that kind of spice generally, and I skipped the bread crumbs -- more out of laziness and time constraints than health consciousness, although there was that factor as well. Hmm, some risotto cooked rice, maybe? Or ... oo, I know, roasted cauliflower, well mashed has a similar texture to mashed potatoes, but less gluey/starchy. They can be quite creamy. Rough chop the cauliflower, chop the garlic, toss w/ olive oil and a little salt, and roast, then mash it all up. NOM,

I think the risotto would probably still seem too starchy to me, and it would be more time-consuming, at least the risotto I've tried to make in the past.

I've been getting into roasting more veggies lately; chunks of beets, parsnips, and sweet potato with the same additions you mentioned and a dash of cinnamon came out well. The cauliflower sounds tasty even as its own dish, but that's a good potential potato substitution to consider -- thanks!

Eep!
