I was going to put it in but wasn't sure if that would be insulting to anyone (although judging by my high school rice-and-gravy fiasco, that shouldn't be a problem).
File (not bothering with the accent, since I no longer have a number pad) is a power made from dried sassafrass. I have no idea what that actually is. :) Anyway, it's used as a thickener and a spice in gumbo and (I presume) other cajun cooking. Sarah pulled it out the other night because she only gets to use it when we have gumbo. :) Anyway, Zataran's and Tony Cachere's both make it but it's hard to find.
