fried fish = yummy

i don't know why i don't fry fish more often. it's yummy! inspired by a recent good eats rerun, i fried two bass fillets with wonderfully delicious results. i highly recommend alton's Pan Fried Fish. it's so easy: season, flour, fry, flip. add capers and lemon juice. tada!

You're right, very tasty! I also used fillets without skin, and agree that there probably doesn't need to be that much better in the sauce at the end. I just used some generic cheap white fish from Trader Joe's and it still turned out excellent. (And adding edamame and brown rice made it into a full meal for the two of us.)
