Cooking for one blows!

After all this time of living out here in Texas by myself (roommate doesn't count, he's rarely around) I've still not gotten use to cooking for one. Tonight's yummy meal could have fed a family of 6! LOL Well looks like I have breakfast, lunch and dinner taken care of for the next few days
