I think you should move to Stepford... :P

I don't like carrot cake, but I am certainly intrigued by the way you substituted for ingredients. I can almost guarantee my results would have been disastrous.

Well, I've gotten a lot better at substituting and tweaking recipes.

It was easy really... what could substitute for oil? The usual suspect is applesauce. Had apples, but not applesauce. Pulped it. Didn't have pineapple and juice. Used more pulped apple and some honey. Wooo!

When baking, just remember to keep the balance of wet and dry ingredients relatively the same and you should be okay.

I remember a friend of mine always using applesauce instead of oil when she made banana bread. I guess it's the same concept. And it tasted really yummy too! :)

Remind me this weekend to transcibe A.B. 18 Karat cake for you. It's dense and not to sweet, sounds a lot like what you ended up with.

I particularly like the yam subsitution. Good thinking.

Am I the only one who is disturbed that while you were short on carrots and had no pineapple, you had had plenty of yam? To much eastern sensiblities if you ask me. but i digress the cake sounds freakin awesome and i cant wait to try it out.

I am disturbed! I had the yam to make roasted yam fries (very yummy and better than regular fries). So there you go. ;-)
