Beets are a super food, the rich deep color telling you they are full of antioxidants. They taste exactly like the earth they are drawn from. They can be roasted, made into soup, shish-kabobed, or used in a casserole. They make everything they touch pinkish purple (an important point to Mazey and Rabbit). They are simply lovely when prepared and yet ugly as a bulldog when pulled from the earth. They are a source of vitamin C and A making them as good as carrots and grapefruit combined. All of this was, of course, known to peasants of eastern Europe since time immemorial. And yet they remaining woefully underutilized in the American (and much of Europe's ) diet.
Until now, when making this list (which as you can see from the subject is extremely influential) will propel them into being America's "it" food.
I just think it's funny that the humble and tasty beet is up there with Lady Gaga on yr list. If only she could incorporate them into a headdress of some sort....
