I have no advice. I'm in your shoes with an HS friend to be honest. We're still as the "ignore" stage. I wish I knew what to tell you, but if you ever figure it out, do tell me.
The situation itself is informing you as to the proper course of action. You know what it will turn into if you respond to her, and your main motivations for doing so are to try and make her see the error of her ways. As someone who used to (and still occasionally does) make this his MO, I can tell you that it doesn't work. People have to recognize their own failings, and they will not hear them from those most willing to list them

I'd reply to her. Once you were friends, and you obviously want to cut things off. I'd tell her that yes, you do want to cut her away because of her emotional instabilities/etc, which really stress you out to a grand degree, and that you'd appreciate it she sort herself out before trying again. That's what I would do at least. In that manner, at least, you put the ball in her court. She'll know you don't want her around. At that point if she continues to bother you, you can ignore her without guilt. And who cares what she thinks about you? You know better than to take her opinion to heart.
Personalities are constructed of groups of memes which can mutate, combine and separate, and change over time. It may not speciate, which is what you're thinking of - though I'd call any entirely new element created by the "Host" a new "species" of ideas created through the combination of ideas already present in the Host - in Kt, in this case. Evolution happens even without speciation.
