Making my own Vanilla Extract

I'm making my own vanilla extract.  with the frequency I use vanilla, this will be much more economically sound.  Fresh organic vanilla beans sliced down the middle, and vodka.   Airtight container and 6-8 weeks... 
You can also use rum or brandy to make it, but I'm trying vodka for this first batch.

I get mine in bulk from Mountain Rose Organics online, which I've found has the best quality for the price. You can also find them at whole foods... or in your case check Fresh Market.

It's only been 24 hours, and the color is starting to change - it's pretty cool actually. All the brown is separated at the bottom and it titrates in hue up to the top, where the vodka is still clear.
