Picnic recipes...

So, I'm going to a Mother's Day picnic this weekend, and I don't know what to make.

What's a good, fast, yummy recipe that I can make to take to my family's Mother's Day Picnic?

Mykel's making a Masala crumble cake, Mom's making roast beef wraps...

Should I be the lame-o that picks up KFC?

What about something like home-made lemon squares?

Funny that... Lemon Squares is my Mom's trademark recipe... I could never do it justice compared to hers.

I found a recipe for a pasta salad that's fast, easy and nutritious, so I may do that.

LoL! I hear ya. There's no way to compete with the "Mom-Factor"... I use my mother's recipes, I follow them (and her notes on said recipes) precisely... and they never turn out like hers!

Todd and I have a tried and true southern picnic recipe that works every time and is really healthy and easy. Drain a can or two of purple hulled peas, add chopped up celery, lemon juice, garlic, and salt to taste. If you want to make it spicier you can add season salt or cayenne pepper. If you're a carnivore and the dish won't be out in the sun too long, you can add some chopped up ham. Last time I did it, I also added some wholly guacamole--that really made it kick.

Purple hulled peas? I've never seen or heard of purple hulled peas... Must be a "true" Southern thing... But I'll look for them, because that sounds like a good, fast recipe!

Ah, that's right--I wasn't able to find them when I was in the midwest or Canada. You could always try black eyed peas, or any other pea that's hearty but sweet enough.
