Restaurants have a way of seeming far more important than they actually are, I feel. They run your life.

Man that sucks, even after you've worked there all that time too. Hopefully some things were worth putting up with for so long though in the end.
Me personally, I just don't think I could work some place that was franchised after working for an independently owned store. I feel like I just have too good of a thing going for me: I can show up to work wearing jeans and a t-shirt, I can eat as much free food and drink as much free beer as I want [on the clock too], we don't even have a front of the house manager -- we servers basically just carry our own weight, can comp meals to please our customers, do whatever basically. I feel somewhat spoiled to have such a great thing going for me compared to all of the other restaurant stories I hear.
Hopefully it will all work out for you in the end and you'll end up getting a sweet "big girl job!"
