Ever since I started cooking Japanese dishes, my general answer to leftover rice has become to gather whatever I can and make fried rice for lunch the next day, because I really don't care much for unflavored white rice

this sounds delicious. I so need to find my brown rice. it is somewhere in the house. I forgot all about adding just salad greens to fried rice. Which i used to do. also last summer since this reminded me of that i had the most delicious sushi at this one odd chinese place. the filling was JUST iceberg lettuce. the leaves were rolled up and not shredded. on a hot day this stuff was GODLIKE! it was actually tastier than the normal Kappa maki i love so damn much.
