After the slow cooking I toss mine in the oven too. I aim for pork croutons.
Also, don't be afraid to add cinnamon and orange peel (or even orange juice). The pork flavor is so strong it can handle heavy spicing, and by the time you get to the prep the sweetness and spicing fades into a nice background melange.
