After staying with my parents' for a month, I have learned the value of the gas range.

The next place we live in MUST have a gas range. This is my personal reminder.

That was one thing I had to give on when we bought our house. Someday soon tho I will be gas enabled. I just need to be able to afford to upgrade the appliances (range, water heater, dryer) and pay to have gas lines run in the house.

Agreed. A gas hob is a wonderful thing!

But what about induction coils? You can even get ones that just plug into the wall, and as long as you don't set them on a metal counter, they're cool... even to the touch.

. . . but make it a good one.

Cheap little burners that make a little hot spot in the middle of the frying pan are not your friend while you're using them and certainly not later when you find the bottom of the pan is no longer flat.
