You're looking for "What E're Therein is Promised" by deeble.

Snape compares himself to Faust's works. He does stop having sex with her when he realises he's in love with her. So quite a bit before she's done with her apprenticeship. He stops her from selling the potions because it's illegal and he doesn't want either of them to get in trouble from the Ministry.

Even though Hermione said she'd do anything to get the apprenticeship, the fic was much closer to non-con than dub-con.
