The first one is A Choriambic Progression by Mairead Triste and Aristide. It's still one of my favorites after all these years.
I don't know the answer to the second request, but for the third you might enjoy Caligryphy's The Fourth Year. I can't really say it's in character, but it's one of those fics I love so much I'll forgive any number of flaws.

Its so hard to find any long, good snarry lately. After 12 years of reading this pairing there is nothing that can surprise me :P I hate it that in a lot of snarry stories Snape is so very out of character. :( Even when author makes him Snapey at the beginning he changes after few chapters into fluffy, emotional lover... >.<
This my not be exactly what you are looking for but both Snape and Harry smoke, they don’t die, maybe a couple more all for #3. It’s The Finders Fee series.
You should definitely try out the Pacify series by Chickenpets on Archive of Our Own. Slow in character build, interesting, no bad ending (the series is still ongoing but they reached their point of happily ever after by now). AMAZING writing.
Hey, thanks for rec but I didnt like that fic much. I prefer more canon-ish stories without weird plot and this one was cool until they started to be together and for me their characters and everything was ruined.
