No Bake Energy Bites

It's probably been a year since the No Bake Energy Bites of goodness came into my life! I love flax seed, coconut, vanilla, oats and chocolate chips. I thought this recipe was made for me! I make about two batches a week and have one or two bites with breakfast, and one when I get home from work to tame the hunger pangs, and sometimes I have one or two for dessert. I'm ignoring the approximate calorie content someone posted on the blog where I found the recipe.




Recipe:
Ingredients

1 cup (dry) oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed or wheat germ
1/2 cup chocolate chips (optional)
1/3 cup honey
1 tsp. vanilla

Method

Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.

:)) I've been adding 1 cup of coconut. Woops! I don't bother toasting the coconut.
