Mud Pie Recipe

This recipe was originally made by my mother in-law, and has been Lou's favorite dessert for many years. It's fairly simple to make, doesn't use a lot of ingredients, and is very tasty!

What you'll need:
2 quarts (or 4 pints) of coffee ice cream, depending on what is available at the grocery store
I package of chocolate wafer cookies
2-4 tablespoons of butter, melted
caramel and chocolate sauce
9" spring form pan
food processor (or some method for crushing the cookies)

Step 1: Crush the wafer cookies until they form a fine powder. Dump the crushed cookies into a spring form pan

Step 2: To make the crust, melt butter, and pour on top of the cookie crumbs. Firmly press mixture together.

Step 3: Carefully spread 1 quart (or 2 pints) or partially melted ice cream on top, as not to destroy the crust.

Step 4: Swirl spoonfuls of caramel and chocolate sauce on top. Add the second quart (or extra pints) of ice cream, and spread carefully on top. Top with additional caramel and chocolate sauce.

Step 5: Cover with tin foil, and freeze for 24 hours. Enjoy!
